fried rice

Ingredients:

2 cups of brown rice

6 cups of filtered water

2 garlic cloves, crushed

1 onion, diced

Small amount of ginger, grated

1 cob of corn, kernels cut from the cob

1 zucchini (courgette), grated

1 carrot, grated

1 cup broccoli florets

½ red capsicum (pepper), diced

½ green capsicum (pepper), diced

¼ pumpkin, grated

8 mushrooms, diced

300g firm tofu (1 packet), finely sliced

2 falafels, diced

Soy sauce or tamari

 

Method:

Cook brown rice in boiling water for about 30 minutes until tender

Saute garlic, onion and ginger in wok

Add all vegetables into the wok and cook until tender

Add tofu and falafel and mix well

Combine cooked rice with the vegetable mixture

Add soy sauce to taste

Serve as a main meal or side dish

Can be cooled and served as a salad

 

Serves 4-6 people
