Spinach Muffins


2 cups SR Flour

2 cups spinach leaves, chopped in food processor

1/4 cup nutritional yeast plus extra

3/4 cup rice milk



Combine all ingredients

Mix well

Spoon mixture into muffin wrappers

Sprinkle with extra nutritional yeast

Cook in medium oven for 30-40 minutes or until golden brown

Serve cooled or straight from the oven

Serve as an appetiser or with a salad for a main meal

Also makes a great snack


Makes 12 muffins
