soy milk

Ingredients:

1 cup whole soy beans, soaked overnight in three times volume

3 cups of filtered water


Method:

Add soaked soybeans and filtered water to food processor or high-speed blender

Process until blended


Drain into a bowl with muslin cloth on top, squeeze out excess liquid - you can use soy bean pulp to add to a salad, soup or curry


Heat liquid in saucepan and bring to boil

Boil for 5-10 minutes

Take off heat and cool


Sweeten with dates or agave, cacao or vanilla

If you used to like the taste of cow's milk, add a sprinkle of salt


Keeps in the fridge for 3-4 days

(125g whole soy beans = 1 litre milk)
